Ingredients • 1 garlic clove, peeled, optional • 300 – 320 grams fresh oregano, basil or tarragon sprigs • 1-1/4 cups white vinegar or white wine vinegar Directions • If desired, cut garlic in half and skewer with a toothpick. • Place in a glass jar or bottle. • Add your herb of choice (oregano, basil or tarragon). Artemisia dracunculus If you have any dragons running around your neighbourhood, you will need a few tarragon plants to use as an antidote for Dragon venom. However, we mortals love to use tarragon as a culinary herb and for pickling and preserving. Much loved in French cuisine, tarragon is used in the ‘fines herbes’ and ‘bouquet garni’.
