Salsify Black (Scorzonera)
A truly unique vegetable with a flavour all on its own. Traditionally a European crop, it is now cultivated worldwide as a gourmet dish. A versatile root crop, it is serves in soups, roasted, dipped in batter and deep fried, or served in a similar manner to asparagus either fried in butter or with a white sauce.
Please note: The skin is inedible and is best removed after boiling for 15-20 minutes.
